Sausage and Sweet Potato Hash

This is one of my families most loved one skillet meals.


One package of GF Italian sausage

2 tblsp of vegetable oil

Large onion, finely chopped

Large red bell pepper, finely chopped

One clove of garlic, minced

Two sweet potatoes, peeled and cut into 1/2 inch cubes

3/4 tsp salt

3/4 tsp ground black pepper

1/2 tsp cumin

1/2 tsp chili powder

1. Remove sausage from casings. Heat oil in large nonstick skillet over medium/high heat.  Add sausage and cook until browned. Remove from skillet.

2. Add remaining ingredients to the skillet. Stir and cook until sweet potato is tender (about 8 minutes).

3. Stir in sausage and cook without stirring on medium/low for 5 minutes or until hash is slightly browned.

Tips: I serve this with a side salad.  If you are vegetarian, you can replace the sausage with tempeh, and if you don’t like sweet potatoes but like yellow (or white or red) potatoes just go ahead and replace them with that.  I do it all the time and it’s just as good. In fact, you can even purchase frozen hash browns and use those instead if you need an even faster meal.
