3 Bean Turkey Chili

Slow cooker recipe


1 pound lean ground turkey

1 onion, chopped

1 green pepper, chopped

2 cloves of garlic, minced

1 can of diced tomatoes, undrained (28 oz)

1 can of chickpeas, drained

1 can of red kidney beans, drained

1 can of black beans, drained

1 can tomato sauce (8 oz)

1 can diced green chiles

3 tblsp chili powder

1 tsp salt

1 tsp garlic powder

1 tsp cumin

1. Cook and stir turkey, onion, green pepper, and garlic in a nonstick skillet on medium high until turkey is browned. I like to sprinkle this mixture with some salt and pepper while cooking. Drain and transfer to slow cooker.

2. Add remaining ingredients and mix well.  Cover and cook on high for 6-8 hours or low for 10-12.

Tips: If you have the time to cook it on low, do it.  If you are a vegetarian, omit the meat and use 3/4 of the tomatoes and sauce. If you have ground beef on hand instead of turkey, use that. And guys, if you are short on time in the morning, skip the first step.  For real.  I promise it will be almost as good – just MIX WELL!
