Evita was looking for a special snack one afternoon this week. I offered to make her popcorn, and she asked if I could make her a sweet popcorn. That’s when this caramel corn was born 🙂
1/3 cup of coconut oil
1/3 cup of brown sugar
pinch of salt
3/4 cup of popping corn
Using a large pot with a lid, heat the coconut oil over medium heat. Once it is melted and hot, add the brown sugar and a pinch of salt. Stir until melted. Add the popping corn and place lid on the pot. Shake the pot constantly so that the corn and sugar don’t burn. Once you hear the popping slow to 2 pops per 5 seconds, take the pot off the heat. Keep lid on and continue shaking pot until popping completely stops. Pour into a big bowl and enjoy with your happy kids!
